Chicken & Broccoli

This chicken and broccoli can double as an easy weeknight dinner and easy, balanced and delicious meal prep rice bowls.
Juicy chicken, crisp broccoli, fluffy rice, and a sweet & savory sauce that come together for an easy, flavor-packed meal.
Minimal ingredients, big flavor, and perfect for busy weeknights or lunches throughout the week!
Ingredients
1.25-1.5 lbs chicken breast, cut into bite-sized cubes
12 oz broccoli florets (fresh or frozen)
2-3 cups cooked rice*
3 tbsp low sodium soy sauce or coconut aminos*
2 tbsp Sichuan Chili Crunch
1 tbsp honey
1 tbsp avocado oil
4 tbsp water, divided into 2 tbsp each
2 tsp minced garlic
Salt & pepper to taste
Instructions
Heat your wok/pan with oil. Season the chicken with salt & pepper & add to the pan, tossing periodically until the chicken is thoroughly cooked (internal temperature of 165°F).
Add the broccoli, garlic and 2 tbsp water. Cover and steam 3-5 minutes (time may vary if yo9u are using frozen broccoli versus fresh).
While that’s cooking, make your sauce: in a bowl, whisk together the soy sauce/coconut aminos, Chili Crisp, honey, and 2 tbsp water.
Add to the chicken and broccoli, toss everything together until all ingredients are mixed and well incorporated. Serve with or over cooked rice, or evenly distribute into containers with even portions of rice for meal prep made easy.
Notes*
Depending on the dish, I usually cook my rice in bone broth for a flavor, protein and collagen boost.
You can use white rice, Jasmine rice, etc; your preference.
You can use either low sodium soy sauce or coconut aminos.
I used a wok for this recipe but you can use a large pan.
If making meal prep rice bowls with this recipe, this should yield 4-5 servings based on your portion sizes.
