High Protein, Slow Cooker Buffalo Chicken Dip
At 410 calories and over 60 grams of protein per serving, this will be your next game day x meal prep hit.
Ingredients
4 large boneless, skinless chicken breasts (2.87 lbs)
1-8oz block reduced fat cream cheese (Neufchatel cheese)
1 cup low-fat (1% milk fat) small curd cottage cheese (could also use whipped cottage cheese)
1 cup nonfat plain Greek yogurt
1/2 cup (4oz) Frank’s Red Hot Sauce
1 cup reduced fat Mexican shredded cheese blend (could sub with a cheddar, Colby Jack, Monterey Jack, etc.)
Seasonings: salt, pepper, garlic powder, onion powder, smoked paprika
Optional garnish: scallions/green onions
Instructions
Add the chicken breast in the crock pot in an even layer. Add seasonings.
Add cream cheese, yogurt, cottage cheese, hot sauce.
Cover & cook on high for 4-6 hours.
When thoroughly cooked, reduce the crock pot to warm, shred the chicken and combine all ingredients together.
Top with an even layer of shredded cheese. Cover until shredded cheese is melted. Top with additional/optional garnish.
Serve straight out of the Crock Pot, or transfer to glass/heat safe serving or storage dishes.
