Chicken Marsala Meatballs
Chicken Marsala, but make it meatballs.
Tender, flavorful chicken meatballs coated in a creamy Marsala mushroom sauce—and the best part? It’s made mostly in ONE PAN, because fewer dishes = a better weeknight dinner.

Ingredients
For the meatballs:
1 lb ground chicken
1/3 cup seasoned Panko breadcrumbs
1 tsp minced garlic
1-2 finely diced Baby Bella mushrooms
Flour seasoned with: salt, pepper, garlic & onion powders
For the sauce:
10 oz Baby Bella mushrooms, thinly sliced
2 cups bbef broth
1 cup Marsala wine
2 tbsp butter
2 tbsp flour
1 tbsp Worcestershire sauce
2-3 garlic cloves, thinly sliced
EVOO
Optional: ½ cup heavy cream
Fresh thyme & parsley (optional: dried)
½ lb pasta (I like a long pasta like spaghetti or linguine, and preferably one with a protein & fiber boost!)
Instructions
Prepare the meatballs: to a large mixing bowl, combine chicken, breadcrumbs, minced garlic, and finely-diced mushrooms. Form into uniform-size meatballs (this will yield ~10 meatballs).
Heat up your saucepan with a little EVOO, just enough to lightly coat the bottom of the pan. Toss each meatball in a coating of seasoned flour, shake off the excess, then transfer to the pan to sear each side for a couple of minutes (they will cook further, later on).
Remove the meatballs and set aside. Add the butter and melt down, then stir in equal parts flour. Add the thinly-sliced garlic and mushrooms, plus Worcestershire sauce. Cook down until the mushrooms soften & release some moisture.
Add liquids: beef broth, Marsala wine, and optional heavy cream. Add your fresh or dried herbs. Cover and bring to a simmer then add the meatballs in. Cover again and simmer until the meatballs are thoroughly coked and have absorbed some of that sauce. In the meantime, part-cook your pasta just until al-dente.
When the meatballs are cooked and your pasta is al-dente transfer the pasta directly to the saucepan and toss everything together before serving.
