Slow Cooker Corned Beef & Cabbage

With Saint Patrick’s Day around the corner, this slow cooker corned beef & cabbage is easy, delicious, and oh so tender.

Ingredients

  • Corned beef brisket, 2-4 lbs (includes seasoning packet)

  • 2 cups water

  • 1 can/bottle of beer

  • 1 coarsely cut onion

  • Carrots cut in 2-3 inch pieces

  • Red-skinned potatoes (either mini whole potatoes, or large potatoes quartered)

  • 1 small cabbage head or ½ large cabbage, quartered

Instructions

  1. Place the potatoes & cut carrots and onions at the bottom of the slow cooker.

  2. Place corned beef brisket on top of the potatoes, carrots & onions, fat side up.

  3. Add the seasoning packet.

  4. Add the liquids (water, beer) and top with the cabbage.

  5. Cook on LOW for 7-8+ hours.

  6. About an hour or 2 before serving, add the cabbage.

  7. When finished coking, remove the brisket and trim off the fat cap.

  8. Slice across the grain, serve with the vegetables & potatoes.
