Pizza Rustica (Savory Easter Pie)

Pizza Rustica — the ultimate Easter pie 🐣✨

Layers of cured meats + creamy ricotta baked into a golden crust = this Italian classic is what holiday traditions are made of🤌🏼

Ingredients

  • Pie crust (can make your own from scratch or use a store-bought, refrigerated, ready-to-unroll pie crust); 1 for the base of the pie and another ½ for the top

  • 32 oz Ricotta cheese

  • 4 whole eggs

  • ½ cup grated Pecorino Romano cheese

  • ½ lb Mozzarella cheese (block or log that cubes easily)

  • 1/3 lb each: salami, pepperoni, ham (can substitute with other cured meats per preference)

    • I purchase mine from the deli counter/cold cuts; not too thin so you can cut into small cubes

  • Black pepper

  • Large mixing bowl, 9” springform pan (can substitute with a round aluminum pan)

Instructions

  1. Preheat oven to 350F.

  2. To a large mixing bowl, add the ricotta cheese + 4 whole eggs. Season with black pepper and mix.

  3. Cut your meats and cheeses into cubes, adding to the bowl along with the grated cheese. Mix thoroughly.

  4. Line your baking dish with the pie crust, pressing evenly into the bottom, around the edges, and up the sides.

  5. Distribute your mixture into the pie crust, smoothing the top.

  6. Use another ½ pie crust to lattice on top (tip: a pizza cutter makes easy and uniformed strips). Trim the excess.

  7. Bake at 350F for 50 minutes to 1 hour. Allow to cool before removing from the pan or slicing/serving.
