Lemon Ricotta Protein Pancakes

Elevate your breakfast game with a twist on boxed pancake mix!

Ingredients:

  • 2 cups pancake mix (can use a classic mix; I use Kodiak Cakes or Trader Joes buttermilk protein mix)

  • 1 cup milk ( 2% used in this recipe)

  • 1 cup part-skim ricotta cheese

  • 2 large eggs

  • Juice of 1 lemon, freshly squeezed

  • Lemon zest (quantity by preference)

  • Optional: maple syrup, butter, blueberries or other fruits/berries for garnish

Instructions:

  1. Add all your ingredients to a large mixing bowl. In the meantime, heat up a griddle pan.

  2. Scoop out batter to portion evenly-sized pancakes, cook on the griddle.

  3. Plate each serving & top with toppings of choice; enjoy!
