Lemon Ricotta Protein Pancakes
Elevate your breakfast game with a twist on boxed pancake mix!
Ingredients:
2 cups pancake mix (can use a classic mix; I use Kodiak Cakes or Trader Joes buttermilk protein mix)
1 cup milk ( 2% used in this recipe)
1 cup part-skim ricotta cheese
2 large eggs
Juice of 1 lemon, freshly squeezed
Lemon zest (quantity by preference)
Optional: maple syrup, butter, blueberries or other fruits/berries for garnish
Instructions:
Add all your ingredients to a large mixing bowl. In the meantime, heat up a griddle pan.
Scoop out batter to portion evenly-sized pancakes, cook on the griddle.
Plate each serving & top with toppings of choice; enjoy!
