Braised Kale & White Beans
A superfood side dish packed with fiber, vitamin C & antioxidants; this dish comes together in 1 pan & pairs well with a protein.
Ingredients
1/2 pound kale greens
2 tbsp EVOO
4 garlic cloves, thinly sliced
1/2 medium white onion, diced
Juice of 1/2 fresh lemon
Zest of 1/4 fresh lemon
1 can Cannellini Beans, drained & rinsed
1/2 cup chicken broth
1/4 cup grated parmesan cheese
Salt, peper, red pepper to taste
Instructions
Heat up a saucepan with 2 tbsp EVOO. Once heated, add the onion & garlic.
Once the onion & garlic are cooked down and softened, add your kale & chicken broth. Cover.
When the kale is mostly cooked down and wilted, add your cannellini beans.
Add lemon zest, lemon juice & grated parmesan cheese, as well as seasonings to taste.
Stir to thoroughly combine all ingredients, cooking down for a few more minutes.
Serve immediately or store int he refrigerator for later consumption.
